Dr. Otwell the visiting lecturer for UNU-FTP

Dr. W. Steven Otwell from the University of Florida, Gainesville, will be the guest lecturer this year at the UNU-FTP.
Dr. Otwell will visit the programme from January 21st to 27. During his stay he will give several lectures on food quality issues and meet with the fellows to discuss and advice on their final
project. Dr. Otwell will also conduct a two day HACCP workshop for fisheries professionals in Iceland and selected fellows for US HACCP certification.
Dr. Otwell's primary work involves applied research and extension services in addressing all aspects of seafood product quality and safety from production through processing to retail and food services for both domestic and international commerce of products from traditional harvests and aquaculture operations.

Thursday, 21 January
kl. 1500-1600: "Advancing Science-based Controls in Response to Increasing International Trade" The lecture addresses trends for seafood commerce in terms of the shifting supply from traditional and authentic selections to an increasing dependence on farmed production from new locations about the world. Discussion addresses the anticipated seafood safety problems and corresponding needs for responsive research.
Monday 25 January
0900-1000: " Seafood Hazards" A review of the primary seafood safety problems encountered in seafood research and commerce
1030-1130: "Use of Food Additives and Processing Aids to Maintain Moisture Content and Yields in Seafood- Commercial Overview and Call for Research" Discusses current status for commercial and regulatory practices and why more scrutiny and research is necessary to prevent adulteration and economic fraud.
1300-1400: "Anticipated Shift in Regulatory and Research Responses for Potential Methyl Mercury Concerns in Seafood" This lectures explains an anticipated shift in concerns from primary caution and warnings to more advice regarding health benefits relative to the changes in available seafood supply

0900-1000: "Controls for Melanosis (Blackspot) in Crustaceans" Discussion on traditional and new controls to prevent one of the most common quality problems for shrimp and crab commerce about the world
1030-1130: "Update on Controls for Potential Histamine Hazards (Scombroid Toxins) in Certain Fish" Discussion on regulatory controls mandated and research needed to prevent potential histamine elevation in certain scombroid fish species
